Kumquat Jam / Marmalade

I love to try new things!  Occasionally, something I try will yield great results, but ultimately not be worth the mess or time involved.  Pasta from scratch is one of those things.  And so is kumquat jam.

The recipes that I found didn’t look too bad – slice kumquats, add sugar (and maybe pectin,) and bring to a boil.  Add to jars and process.  Done.

The reality wasn’t that easy.  Kumquats are very small, with very little fruit, and very big seeds.  I spent an hour slicing the little buggars and picking the seeds out of half of the kumquats.  At which point I decided that half of the kumquats would be enough. (I added an orange to make up the difference.)

I ended up with a single jar of jam.  In my mind that is not an acceptable yield for the amount of time spent on the recipe.  The hybrid orange/kumquat jam tastes great – it is just sweet enough with a touch of bitterness.  It will be the only jar I make.

(And, just in case you were wondering, yes, that is homemade bread.  It is incredibly simple to make, and oh so delicious.)
